To eat them, thaw on the counter at room temperature. To get the bananas ready for baking, I like to just mash them up on a cutting board using a fork. Next, wrap them in plastic wrap and then freeze them in a large Ziploc bag. Ingredients Bananas - The star of the show The blacker the banana, the better here. To freeze these banana muffins, let them cool completely. 3- Mix the wet ingredients: Using a whisk, mix together the mashed banana, egg, butter and sweetener. Add chunks of banana to a stand mixer with the paddle attachment and let it beat away. 2- Mash the banana: In a separate large bowl, mash the banana with a fork or potato masher.Use a fork to mash small pieces of bananas until soft.In another large bowl, beat together bananas, sugars, egg, oil and vanilla. In a large bowl, combine 1 1/2 cups flour, baking soda, baking powder, salt and cinnamon. ![]() So if someone you know has an egg allergy just know that these are great without any eggs. Lightly grease 12 muffin cups, or line with muffin papers. Good news, they actually were fabulous without. This time when I made them I had just put them in the oven for a couple of minutes when I looked over to the egg that was supposed to be in the batter sitting on the counter. As with banana bread or any other muffin, these are almost better the next day because the banana flavor starts soaking in making for a moist banana muffin.
